Mediterranean Chicken Salad

Ingredients

  • 1 rotisserie chicken shredded
  • 1 bag baby spinach, chopped
  • 1 can garbanzo beans
  • 1 jar marinated artichoke hearts, halved
  • 1 English cucumber, quartered
  • 1 container grape tomatoes, halved
  • 1 red pepper, chopped
  • 1/4 cup red onion, chopped
  • 1/2 cup kalmata olives
  • 1 box Near East couscous, cooked using box instructions
  • 1 lemon
  • 1/4 cup Extra Virgin olive oil

Instructions

  • Combine all ingredients except the lemon juice and olive oil. Squeeze fresh lemon over the top of the salad. Drizzle olive oil over the top. Combine.

Notes

This salad is very flexible.  Add whatever chopped veggies you have on hand.  Sun-dried tomatoes are also good in this.
