Although our family eats relatively healthy, after all the holiday indulgences, January is a good time to check our diets. Like the rest of the world, we always make a goal in January to eat more fruits and vegetables and less carbs and sugar. When I meal plan it makes these goals easier to reach so I thought maybe it would be helpful if I share my healthy eating meal plan with all of you! I try to find recipes that are easy and family friendly because who has time to be in the kitchen all day to make a meal your kids won’t like? Nobody! Here is what is on my list this week…
White Bean Chicken Chili
This White Bean Chicken Chili is a new recipe from jessicagavin.com so I will let you know how it is! My 2020 plan is to make one soup/chili each week because they make great leftovers for lunch. This recipe requires a little bit of prep work because you roast the jalapeños, but it doesn’t look hard and I think it will add so much good flavor.
Steak Salad
We received an Omaha Steak gift box for Christmas so I have some steaks I need to use. I plan to grill the steak and slice it thinly over a bed of romaine lettuce. I add carrots, red peppers, cucumbers, green beans, and roasted potatoes. The green beans and the roasted potatoes are my secret ingredient that make it taste extra special! Add a little feta cheese and drizzle some olive oil and balsamic and you have a pretty healthy and filling main course salad.

Do you follow Honey We’re Home? She is adorable and is really into fitness and healthy eating. She posted this recipe several years ago and I’ve been making it ever since. If I am short on time, instead of making the mustard based dressing, I will just use Garlic Expressions. Have you ever used this dressing? It’s really good. (Don’t buy it from this Amazon link, it’s really expensive, you can find it in your grocery store.)
Cheers to 2020 Healthy Eating Goals
This is all I have planned for this week. We can have leftovers or I will do something really easy like breakfast for dinner if we need another meal. As of now, the entire family is on board with trying to clean up our eating choices. I’m not a dietician and don’t follow any specific type of diet. It’s more like everything in moderation and trying to make better choices. We will see how long it lasts, but at least I know they will be getting a healthy dinner!
