White Bean Sausage Spinach Soup
The first time I made this, everyone in my family thought it looked disgusting. 😂 But, they were hungry so they ate it and guess what? Everybody loved it! It’s nice to make a soup or chili on Mondays because it makes great lunch leftovers the rest of the week. To make this recipe even easier, I buy the celery, onion, and carrots already chopped. If you’re near a Trader Joe’s, they have a Mirepoix mix with all these ingredients. I also use the Trader Joe’s chicken jalapeño sausage to add a little spice to the soup.

This one really couldn’t get easier! It’s perfect for those busy night of driving kids all over. I add chopped broccoli to the crock pot and serve with rice.
Mediterraean Chicken Salad
This salad is fresh and flavorful! The whole family likes this one and it makes great leftovers for lunch. The ingredients are really flexible, so feel free to be creative and use what you have on hand.
Mediterranean Chicken Salad
Ingredients
- 1 rotisserie chicken shredded
- 1 bag baby spinach, chopped
- 1 can garbanzo beans
- 1 jar marinated artichoke hearts, halved
- 1 English cucumber, quartered
- 1 container grape tomatoes, halved
- 1 red pepper, chopped
- 1/4 cup red onion, chopped
- 1/2 cup kalmata olives
- 1 box Near East couscous, cooked using box instructions
- 1 lemon
- 1/4 cup Extra Virgin olive oil
Instructions
- Combine all ingredients except the lemon juice and olive oil. Squeeze fresh lemon over the top of the salad. Drizzle olive oil over the top. Combine.
